Hotel Del Makes It 1500 Plus Two

The Hotel Del Coronado was dealt a crushing blow this spring when wine director Ted Glennon, who was in charge of adult beverages for the ENO Wine Room as well as their white linen enclave 1500 Ocean, turned in his resignation to pursue a job up north at Restaurant 1833 in Monterey. Mere months later, 1500 Ocean's popular executive chef Brian Sinnott gave his notice, deciding it was time to pursue new career avenues despite being at the top of his game.

This chain of events sent the venerable hotel's chef- and som-less gourmet resto into gastro-purgatory, but yesterday it was announced that the powers that be at The Del have made decisions as to who will take the place of Sinnott and Glennon. The former's clogs will be filled by chef Aaron Martinez, whose most recent résumé notches include The Restaurant at Rancho Valencia in Rancho Santa Fe where he was chef de cuisine and Addison, the AAA Five-Diamond restaurant at The Grand Del Mar where he trained as a sous under award-winning chef William Bradley for three years.

The role of manager and wine director will be Joe Weaver's to shoulder. Weaver was promoted from assistant manager/assistant sommelier and will over see a staff of 50 and a wine program that's comprised of over 800 labels. Weaver's former employers include the short-lived yet critically appreciated Crescent Heights Kitchen and Lounge as well as Quarter Kitchen at the (then) Ivy Hotel.
