Well, almost. Qvandeyz's Finest Catering's beignet man Nestor was kind enough to take me through the process, but Executive Chef Quanettra Purdy had to step in and lay a heavy proprietary hand on the proceedings. She was very sweet about it though, and notes that if people check her website in a couple of weeks, they'll be able to get a small-batch version of her recipe. (Website appears to be down for the moment; we'll keep you posted...)

YES! I'd never even heard of beignets until Saturday at Gator by the Bay. And the a la mode one I shared was to die for! literally. Since I have decided to perfect the pastry, the recipe will most definitely come in handy. :)

This just made my day. :)~
