Every Tuesday from 5 pm till close, Galaxy Taco celebrates Taco Tuesday by inviting a guest chef into their kitchen to create three additional tacos to add to their menu for that evening.
This time we're welcoming local entrepreneur Fernando Gaxiola, owner & founder of Baja Wine & Food. Gaxiola spent years consulting around the globe but moved back to the San Diego/Tijuana area to connect with the local culinary and artistic community. He launched his company, Baja Wine & Food, which promotes the best boutique wineries in the Valle de Guadalupe region, distributing their wine internationally and promoting events and tourism stretching from the U.S. to Baja California.
