A hearty, main course stew. I like portobello mushrooms in mine, but they are optional. I also like to add a little sherry to my bowl, but some people don't like it so I don't add it to the pot
Ingredients
- 4 tbls butter
- ¾ cup red onion
- 2 cloves garlic
- 1 large potato
- ¾ cup mushroom Optional
- 1 qt half and half
- 1 can chicken broth
- 1.5 lbs fresh oysters and juice
- 1 tsp salt
- 1 tsp pepper
- 1 pinch cayenne pepper Optional
- 1 dash hot sauce Optional
- 1 dash sherry Optional
Instructions
Melt the butter in a skillet and saute the onions, garlic, mushroom and potato.
Transfer the mixture to a large pot and add the half and half, and chicken broth. Season with salt and pepper to taste. I also like some cayenne pepper or hot sauce with mine. Stir over medium high heat until it is ready to boil, then add the oysters and juice. Keep stirring to keep the half and half from burning on the bottom. When the oysters curl at the edges the stew is done.
