Ingredients
- ½ onion, finely chopped
- 3 cloves garlic, peeled and minced (2 cloves if you're not Italian)
- ½ cup extra-virgin (it should not even have thought about sex!) olvie oil
- 1 lb Swiss chard (freshly picked, of course) stems removeds, leaves chopped finely (gourmet style) or coarsely (peasant style)
- red pepper
- parmigiano cheese
- orecciette Optional
Instructions
Saute onion and garlic over medium-low heat in olive oil until onion is translucent (do note let garlic blacken or it will be bitter). Season to taste with crushed red pepper and grated parmigiano cheese.
Chef's tip: this is especially delicious over a bowl of orecchiette (an Italian pasta that translates as "little markets) cooked al dente.
