Delicious, soft cookies with just the right amount of sweetness.
Ingredients
- 2.0 cups oatmeal (dry)
- 2.75 cups brown sugar
- 0.75 cups white sugar
- 1.0 cup butter (soft, but not melted)
- 0.25 tsps salt
- 0.5 tbls vanilla extract
- 2.0 cups flour
- 1.0 cup mini chocolate chips
- 0.5 cups chopped hazelnuts
- 1.0 tbl cocoa powder
- 2.0 eggs
- 1.0 tsp baking powder
- 1.0 tsp baking soda
Instructions
Preheat oven to 375F.
Blend the oatmeal in a blender or food processor until it is a fine powder.
Mix together oatmeal, salt, baking powder, baking soda, flour, brown sugar, white sugar and flour in a large mixing bowl.
Add butter and eggs to dry mixture. Mix together with hands. Dough will be very thick.
Add hazelnuts, chocolate chips and cocoa powder. Again, mix with hands until well blended.
Drop by tablespoon onto cookie sheet. Bake for 9-11 minutes.
Makes 3 dozen cookies.
