I love salad and I love shopping at Trader Joe's. All of the ingredients for this salad can be found at Trader Joe's and one of the ingredients, a white stilton cheese with cranberries, is only sold at Trader Joe's around Thanksgiving and Christmas. This salad is very easy to put together at the last minute. I usually serve it in a big glass salad bowl because it looks pretty.

Ingredients

• 6 ozs 2 Bags Trader Joe's Spring Greens Mix
• 1 half cup Trader Joe's White Stilton Cheese with Cranberries (crumbled)
• 1 half cup Trader Joe's Sweet and Spicy Pecans (chopped)
• 1 half cup Extra Virgin Olive Oil
• 1 quarter cup Balsamic Vinegar
• 2 tbls Fresh Orange Juice

Instructions

Combine two 6 oz. bags of Trader Joe's Spring Greens Mix into a large salad bowl. Crumble 1/2 cup (or more if you really like cheese like I do)of Trader Joe's White Stilton cheese with Cranberries and toss. Add 1/2 cup chopped Trader Joe's Sweet and Spicy Pecans. Toss. Note: if your guests shy away from hot spicy foods, you can substitute Trader Joe's Candied Pecans instead, although the Sweet and Spicy nuts are really delicious and not that hot when mixed in the salad.

For the dressing, which you can make quickly right before you serve the salad, whisk together 1/2 cup of Extra Virgin Olive Oil with 1/4 cup of Balsamic Vinegar and 2 Tablespoons of fresh Orange Juice. Immediately pour over the salad and toss until evenly coated. Serve.
