The pairing dinner is curated by Chris Simmons, certified datador and the director of Food and Beverage at Farmer & The Seahorse, who previously helmed the All Agave Club at Rancho Valencia Resort and Spa, as well as the “Catador’s Corner” tastings and tequila dinners at The Patio on Goldfinch, where he was GM prior to his current role.
On hand for the event will be the owner of Tequila Ocho, Tomas Estes, to guide guests through the tasting of the single estate agave-based spirits. Tequila Ocho is one of the few tequilas still made slowly and from various regions within Jalisco, Mexico. Each batch comes from a different field or rancho contributing distinctive characteristics of that place.
