No-Fuss Pecan Pumpkin Cake

Homemade Beanie Weenie
"Beanie Weenie" was a staple of C-Rations (field rations consisting of three cans, plus various sundries. Replaced by MREs in the 1980's), and are still made today by Stokely-VanDeKamps as a canned "fast prep" item (just open the can, dump into a cooking container, nuke 'em--dinner). Kipper Salad Sandwiches
Kippered herring has been a snack food for many decades, and is a staple in English Cooking. Basically, "kippers" are smoked herring, and yes, they are very delicious! I have also found that they can make a nice change-of-pace from tuna in fish-salad sandwiches. I make mine with catsup, mustard, spices, and a few drops of soya. I do not use mayo, since I'm allergic to it. The bread I use is hot dog buns. Easy to fill-and-wrap.
Crock-Potted Tuna, Bean, & Veggie Stew
One of the nice things about going to a "Food Bank" is the various amount of veggies, pasta, and dried beans that is included in the package. Since I made such a trip, I thought that I would put together a easy-to-make stew with some of the ingredients I got (plus a few I had left in my "canned, dried, and powdered" box). This recipe involves the use of beer as a broth base. Know that when you cook with beer or wine, the alcohol evaporates as you cook. That, and by adding seasoned salt to your broth, makes trying to catch a buzz from drinking the broth very risk business indeed!

A change of pace--a dish with no meat in it! I love good Italian food...but sometimes, the love is not returned. The reason--the tomato sauces used in many "Italian" dishes. Though tasty, tomato sauces are also high in acid content. Not the sort of thing to settle a tummy going through a GERD (Gastro-Esophageal Relflux Disease) attack. However, unlike their neighbors in Rome and Sicily, the Northern Italians use very little, if any, tomato-based sauces in their dishes (more cream-based). So, here's a dish that is frugal, filling--and vegetarian-friendly (though not for strict vegans, since it contains cheese).

This is a dish I made in the Crock-Pot today. It melds the flavors of sweet, sour, and meaty into a stew (what "Ragout" means in French, btw) that look great and tasted even better.

I really can’t cook. I can do a few dishes adequately, if plainly. They had a special on pork ribs at the store a couple of days ago, so bought a rack. Made the mistake of asking the butcher to cut them up for me, which he did -- lengthwise. Anyway, I didn’t know until it was time to cook them, so just went ahead and prepared them, and they came out good.
Seafood Mac & Cheese
By itself, macaroni & cheese is an inexpensive, filling, and easy-to-make dish. It also lends itself well to experimentation. This is a variation that would qualify as a "One-Pot" meal, in that it incorporates pasta, tomato sauce, cheese, fish, and peas. It's a dish that can be used for lunch and/or dinner--and it is filling, trust me!
Grilled Rabbit w/ Ginger Sauce
This is a dish from my youth. Rabbit has been a staple "camp pot" meat for centuries -- hassenpfeferr (peppered rabbit stew) is a popular dish. It used to be that many grocers here in San Diego County would stock frozen rabbit (the only one I know of now is Ralph's) for cooking, and only in the spring. Being that rabbit is expensive to buy frozen (or if you go out and pick off one with your trusty .22LR or shotgun, you can only do so with a hunting license), this is a dish that should be saved for special occasions.
Pulled Pork: Crock Pot Style
Pulled pork has been an East Coast barbecue staple since American colonial times. It got it's start in the Carolinas--all due to the state of dental hygene at the time. In American Colonial times, folks lost a lot of theit natural teeth at an early age. Periodontal disease, gingivitis, scurvy, cavities...stuff we knock down with proper diet and thrice-daily useage of brush-borne dentifrice...were par for the course during that time. Natch, having few-or-no teeth meant eating was going to be a chore unto itself. The servants of these folks found that if the slow-cooked smoked, spiced pork roast for a few hours, you could shred the meat with merely gentle pressure from a fork. Naturally, this made it easier to gum-and-gulp down. And so, "pulled pork" was born. My recipie is for a mild variety of pulled pork, with more accent on timer in the broth and less on spiciness. A few drops of Tabasco sauce can be added, if you like your food a bit on the zippy side. I also included a recipe for making "Pulled Pork Sandwiches au mode Johnston."
Crocked Crock-Pot Spareribs w/Sauerkraut
Picked up my new Crock-Pot on Friday, and thought that this would be a good time as any to try a bit of "slow cooking." This is NOT a German recipe, by the way, but one my mom brought with her from Indiana. BTW: the beer used in the broth "de-alcoholizes" itself as the dish cooks, so you won't get wasted eating this dish. It's best to use a brand-and-style you feel comfortable with. With pork spareribs, American-styled pilsner lager will do. Beef might require a "malt liquor"-level beer, due to the heavier tissue weight and mass.

Corned Beef Recipe--Done A Bit Different!
And now, for something completely different: I enjoy good corned beef, but it can be a bit of a pain to prepare without it turning into shoe-leather. And as my cooking appliances are a bit on the limited side, I have to improvise. So, after a bit of experimentation, I have devised a way to cook a nice point-cut corned brisket on the grill. That's right--GRILLED Corned Beef! It's easy to make if you know what you are doing.

Spicy Santa Dip
This dip is especially good for parties because of it's fiery color. It's a little bit spicy, but not really hot (unless you add more cayenne than this recipe calls for) What's really fun about it, though, is the fact that you can change the name of the dish and serve it at other holiday parties too! I've called it "Devil Dip" for Halloween, "Rockets Red Glare" dip for the 4th of July and "Volcano Dip" for a luau. It tastes yummy and looks exotic. You can make it even more dramatic if you serve it in a black dish. I usually serve it with pita chips or blue corn tortilla chips.
Pesto Tortellini Salad
I just put this pasta salad together for my family's pre-Christmas potluck. Everybody loved it. It's very easy to make the night before, transports easily in a cooler and tastes great the next day. This recipe makes a pretty big batch for a large crowd, but you can halve the ingredients for a smaller gathering, such as a New Year's Day brunch.
Curried Waldorf Salad
This is a nice salad to serve at the holidays because of the festive red apples. I like to serve it in a glass bowl for presentation's sake. I've doctored up the traditional "Waldorf" dressing to make it a little more fruity and spicy. I like this version much better than the original. Family members at our Christmas party kept asking me what was in it. Well, here you go. I've made this recipe mostly as a side dish for large potlucks, but you can also serve this as more of a featured salad, plated and served atop curly green leaf lettuce.
Holiday Salad
I love salad and I love shopping at Trader Joe's. All of the ingredients for this salad can be found at Trader Joe's and one of the ingredients, a white stilton cheese with cranberries, is only sold at Trader Joe's around Thanksgiving and Christmas. This salad is very easy to put together at the last minute. I usually serve it in a big glass salad bowl because it looks pretty.
Cranberry Cream Cheese Dip
This recipe is ridiculously simple and extremely delicious. It was passed to me by word of mouth many years ago and I have been making it ever since. I always serve it on a pretty glass plate, but it would probably look even more spectacular served on a silver platter. This dish always gets oohs and aahs for presentation. I usually serve this with crackers that are not too salty, but it's equally yummy served with fresh vegetables, especially carrots, cauliflower and celery.
Mediterranean Layered Dip
This is a different take on the Mexican 7 layer dip. It's still served in a glass trifle dish like the Mexican version, because it looks so pretty, but the flavors are from Italy, Greece and Lebanon. For the sake of convenience, I purchased all of the ingredients at Trader Joe's.
Number "1" Peanut Butter Cookies
These are the simplest peanut butter cookie recipe. It's easy to remember (1 cup, 1 cup, 1 egg) and quick to whip up a batch with only three ingredients. Variations can fancy them right up! Add chocolate chips or peanut butter chips. Use crunchy peanut butter. Or drop a chocolate kiss in the middle of each one.

Spicy tuna dip
An appetizer for those who consider who consider toasting bread to be cooking: I hate potlucks. I hate them because I don't want to be lame and bring store-bought cookies, but I hate cooking, and honestly I don't want to be cruel by making other people eat my food either. But thanks to my best friend I no longer have to stress about such occasions. I just whip up this four ingredient dip and present it confidently alongside chips.
Holiday Pops
Take a pillsbury cookie dough of your favorite flavor or make as directed below and prepare your own Yule-delicious homemade cookies. Place the cookies on a 6 or inch or longer lollipop stick and bake in the oven. Wrap them in a sweet holiday cellophane wrap cut into 6 to 8 inch square depending on on the size of your cookie. Then decorate each cookie with your favorite ribbon. Then place the cookies stick side down in in a holiday pictured, red or green bowl of uncooked rice. Cover the top of the rice well with colored sugar and wrap in holiday cellophane wrap. As an added idea you can palce them in a oriental food container and place parchment paper between each cookie and wrap in holiday cellophane wrap and give as a gift or an party favor. You can use both of these ideas as a gift with your friends or family or place them at a holiday party. ****Carefully Wrap lollipop sticks in foil to prevent burning or browning***

Very Veggie Enchiladas
My Dad recently had heart surgery so I wanted to try to make some recipes for him that would be heart healthy as well as good tasting. This recipe is chock full of veggies, uses whole grain corn tortillas and substitutes low fat cottage cheese for full fat jack or cheddar cheese. I thought a green sauce would be best for this dish, but most of the store bought sauces are full of nasty, un-natural things and are especially high in sodium content (The Frontera sauce had 35 mg of sodium compared to 200 mg and up in the canned green enchilada sauces). Generally I would make my own sauce, but this week I was in a hurry. I found a jarred green tomatillo sauce made by Frontera (who incidentally makes a line of excellent salsas) that is made for livening up guacamole. But for my purposes, I used it as my enchilada sauce. Perfect. I even surprised myself at how good these enchiladas tasted. For this go round I used kale, orange colored cauliflower (which has more beta-carotene than white, and looks really terrific) and fresh mushrooms. You can substitute just about any kind of veggies you like. Next time I’m going to try artichoke hearts, carrots and asparagus.
Nutty Tofu Wraps
Summertime is perfect for experimenting with fresh, fun salads and funky, cool wraps. This recipe brings together both of those refreshing summer treats. I recently came across a recipe in the newspaper for an Asian-style beef filled wrap, that’s where I got the inspiration. What I came up with bears little resemblance to the aforementioned meat filled sammy. This wrap is made with peanut butter/soy sauce marinated tofu, with a few extra goodies thrown in. By using Trader Joe’s double sided package of tofu, you can make a lot or a little, depending upon how many wraps you will be serving.
Rich Miso Mushroom Wine Gravy with Rosemary
This is a tasty vegetarian sauce to use on any vegetables, especially potatoes. Great as a classic gravy for stuffing, and meat-eaters will lap it up! Don't omit the miso, as it adds a rich, complex layer of flavor.
Mushroom Pesto Pitas
Once again, I found myself craving pizza, but I wanted something a little different. Since I love to experiment with recipes and I was playing around with basil this week, this is what I came up with. These are less like pizzas and might better be described as pita appetizers. They’re crunchy and delicious. You can use store bought pesto for this recipe, but where’s the fun in that?

Grilled Tilapia w/ Spicy White Sauce
I was born and raised in San Diego and fish tacos are a local favorite. I am a self-proclaimed "chef" and HAVE to try to make EVERYTHING at home, from scratch. I like to see if I can make a dish better than the "real" chefs out there. Now, I am not a fan of fried fish, so I decided to do a grilled fish taco and top it with that special white sauce that I added my own spicy twist to. You can choose your heat. I love spicy foods, so I add more than called for. The first time I made them, I made so much of it that I had to invite my neighbor over to help me and my boyfriend eat them up!! The marinade is very subtle, but adds a sweet and savory flavor to the grilled fish. That combined with the spiciness of the white sauce, crunchiness of the cabbage, and of course CHEESE makes this the perfect outdoor summer meal. Add some beer and margaritas to the mix and you have yourself a fun no-fuss dinner party!! They are always such a big hit, I automatically double my recipe!!

Fruity Breakfast Rollups
This recipe came into existence one morning when I was hungry, in a hurry, and not quite fully awake. This lucky accident happened by the mere fact that the ingredients were in my fridge, within my sight line, and within my immediate grasp. This recipe is now one of my favorite breakfast dishes, but it occurred to me that you could also cut the rolls into pinwheels, stick a toothpick through them, place them on a platter and serve them as fancy appetizers. Voilà!

I came up with this recipe for my cousin and I, who are vegetarians, so that we could have a substantial entree-style salad to eat at our family gatherings. Everybody ended up loving it. I double the recipe for parties and potlucks.

It's kind of like a fancy Italian grilled cheese sandwich. I've also tried this with the addition of fresh mushrooms and broccoli. It's very versatile.
