These little graham cracker sammies are as perfect for a little kid's birthday party as they are for a grownup's fancy tea. It just depends on whether you serve them with a plastic Spongebob tray, or upon a silver platter. The choice is yours.
This recipe is so easy that anyone from hungry husbands, to overscheduled tweens, to harried hostesses can whip up these delicious sandwiches in just a few minutes.
Choose your platter, then lay out 12 graham crackers, cinnamon side down. Spread each cracker with 2 Tablespoons of the ricotta cheese, then top the cheese with 1 Tablespoon of lemon curd. Finish by putting a second graham cracker, cinnamon side up, on top and you've got your party appetizers.
