Delicate sole with sweet bananas and macadamia nuts. Perfect reward for a hard day of surfing.
Coat sole fillets with flour, season with salt and pepper.
Melt 1/4 cup of butter in skillet over medium heat. Sauté fillets 'til cooked through, about 6 minutes, flipping once. Transfer to platter.
Add remaining butter, bananas, and nuts to skillet and stir over medium heat for 1 minute. Pour over fillets.
Garnish with chopped parsley. Serve with wedge of lime.
Side dish: Ewa Rice and Beans. Prepare long-grain rice per directions on package, but using unsweetened coconut milk instead of water. Meanwhile, roast green beans in canola oil at 450 degrees 'til crispy, about eight minutes. Sprinkle with sesame oil.
Mmmmmmmm.
