Fruit in an anise ginger syrup. A delightful way to serve fruits. It makes a beautiful presentation served in a trifle bowl.
Ingredients
- 1 lemon
- ½ cup water
- 3 slices ginger root-1/3 inch thick
- 4 whole star anise or 1/8 cup of pieces
- ½ cup sugar
- 1 tbl fresh lemon juice-divided use
- 2 lbs stone fruit such as plums, nectarines, peaches; or peaches, strawberries, bananas
- 1 cup blueberries
Instructions
With vegetable peeler, carefully remove 3 half inch pieces zest from the lemon being careful to get as little white as possible.
In a saucepan bring the water to a boil with zest, ginger root, star anise, sugar and one teaspoon of the lemon juice. Simmer stirring until sugar is dissolved.
Cool syrup and discard star anise. (syrup may be made two days in advanced and chilled, covered)
Halve and pit the fruits and cut into wedges.
If using; halve the strawberries and cut the bananas into 1/4 inch rounds.
In a bowl toss cut fruit together with blueberries, syrup and remaining lemon juice. Mixture may be made 8 hours ahead and chilled, covered.
