Have you ever heard the term Absence without Malice, well this so called critic obviously did the opposite with Malice! Lets see, this critic so-called accomplishments: She has written/co-written four out-of-print cookbooks and an unauthorized biography of Francis Ford Coppola What is a critic? 1 a : one who expresses a reasoned opinion on any matter especially involving a judgment of its value, truth, righteousness, beauty, or technique b : one who engages often professionally in the analysis, evaluation, or appreciation of works of art or artistic performances 2 : one given to harsh or captious judgment Why is she building up another restaurant in her second paragraph? All restaurants have various ethnic personal working in there establishments & even a critic would know they are not the ones who establish the recipes, so why play the racial trump card: The cook looked more likely to be from Nuevo León than from Nuevo Orleans. As far as drinks to imply that the Indigo Café under pours drinks is totally ludicrous, I seen more guest asking the drinks to be toned down & never heard this complaint whether a Fufu drink or a Jack & Coke. The bar long, hmmm 5 – 6 stools. The food is not designed to be overly spicy, due to most of the cliental are visitors that like to try southern Cajun food, mostly retired. But if you would like to spice it up a little, there are 50 or more various bottles of Cajun hot sauce at your disposal to spice your food up a little or if you would like your food with a little bite, alls you have to do is ask ! The restaurant is also is health conscious in there sauces. Looks like this so called critic as a professional strikeout per definition CRITIC. Just a local, who does enjoy the Indigo Café & shame on you! Rodney
