Earth Day "Pea" Menu
This farm-to-table six-course feast is a tribute to spring and the pristine local products available from the farmers and purveyors who Chef Nathan works with every day, along with superb wine pairings. It begins with Peas with butter and Chilled English Pea Soup with basket ricotta, kumquat and mint gremolata paired with 2014 Galerie Sauvignon Blanc, Napa Valley, Calif. Iberico ham with sweet pea croquette, pickled spring onion and manchego cheese and 2014 Carmel Road Unoaked Chardonnay, Monterey, Calif., follows. Then there's tortellini with pea and morel mushrooms accompanied by 2013 Gran Moraine Pinot Noir, Willamette Valley followed by loin and shoulder of lamb with snap pea, cauliflower, "matar" and a glass of 2005 Chateau Vignot, Saint-Emilion, France. Dessert is buttermilk cake with sweet pea sorbet, lemon verbena and a pea and kumquat macaron served with Illy Caffe.
