Convergence of Art & Chocolate
Culinary historians of San Diego present "A Convergence of Art & Chocolate," featuring Will Gustwiller, in the 9th floor Special Event Suite at the Central Library.
With a 2004 masters degree in sculpture, Gustwiller transferred his artistic perspective and talents to a new medium, chocolate, and began to create his unique confections through the exploration of taste and spice. His one-man operation developed into Eclipse Chocolat's dessert cafe in 2007, then to the present 40-employee Eclipse Chocolate Bar & Bistro in South Park.
Chef Will describes his mission as dedicated to crafting premium artisan foods and confections with a unique culinary perspective while maintaining sustainable and ethical operations. The company pledges ten percent of its net profits to local non-profit organizations.
