San Diego is blessed with able bakers. But for wedding cakes, none can compare to Fabulous Pastries, each of whose cakes is a work of art. The baker/owner, Beryl, uses an icing called fondant, which drapes the cakes as if it were a piece of fabric; the fondant is then decorated with hand-crafted flowers, leaves, ribbons, seashells, gold leafing. Beryl even has a press that can produce "lace" made from fondant.

At least nine different cakes are available; the simplest is a white cake with a thin layer of apricot jam, filled with chocolate and coffee buttercream. In terms of inspiring awe, the cake is less important than the decorations. Clients must meet with the baker to decide every aspect of the design. Prices run from $3 per person on up; the average is $6.75 per person.
