Liang Mian, "cold noodles" is the ubiquitous street snack in Sichuan province. At heart a simple combination of soy sauce, black vinegar, chilies, chili oil, sugar, and sesame paste, the flavor ends up being both complex and refreshing. Image Add in a nice "buzz" from Sichuan Peppercorns and minced garlic, and you've got me sold.

The version of this dish from Ba Ren usually delivers all of the above for me. It's become a comfort dish when the mercury heads North. There's something to be said for consuming spicy food during summer. Image Just remember to mix well, two chopsticks, or a chopstick and a spoon will do well.
