Fruity Breakfast Rollups
This recipe came into existence one morning when I was hungry, in a hurry, and not quite fully awake. This lucky accident happened by the mere fact that the ingredients were in my fridge, within my sight line, and within my immediate grasp. This recipe is now one of my favorite breakfast dishes, but it occurred to me that you could also cut the rolls into pinwheels, stick a toothpick through them, place them on a platter and serve them as fancy appetizers. Voilà!

Mediterranean Cous Cous Bean Salad
I came up with this recipe for my cousin and I, who are vegetarians, so that we could have a substantial entree-style salad to eat at our family gatherings. Everybody ended up loving it. It's easy to make and tastes best if prepared a day ahead of time, just give it a little fluff before serving. This recipe makes enough for about 6 to 8 side dish servings. I double the recipe for parties and potlucks.

Sun Dried Tomato Pizzanini
I came up with the idea for this recipe one evening when I was craving both pizza and garlic bread. I didn't have any pizza shells and the idea of eating both pizza and garlic bread in one sitting seemed a bit gluttonous. This is a quick and easy recipe using common staples. It's kind of like a fancy Italian grilled cheese sandwich. I've also tried this with the addition of fresh mushrooms and broccoli. It's very versatile.
