Meet Quantum Brewing Company

Fifteen years saturated with constant travel provided Dylan Wallace many worldly experiences — he’s climbed Mount Kilimanjaro, traversed the Inca Trail, and eaten and drunk his way through many cities in Europe and Asia. But such globetrotting makes it impossible to build a business. Now that he’s settled in his Kearny Mesa home, he has the time and proximity to bring that community its own brewery, Quantum Brewing Company (5375 Kearny Villa Road, Kearny Mesa).

A homebrewer of over 12 years, Wallace originally wanted to name his business Nanobrewing Company to communicate its small level of production (he’ll be brewing on a one-barrel system initially), but since nanobrewery is an industry term, he went with Quantum, which references the smallest possible discrete unit of any physical property. Traditionally, that term refers to energy, but in this case, it has to do with Wallace’s beers, which will include a red ale, wheat beer, California common, porter, imperial stout, barley wine, and pair of IPAs, plus rotating specialty styles.

Those beers will be available exclusively at Quantum’s tasting room, which will be decked out in an “Old World with a bit of science” motif Wallace describes as Archimedes, Galileo, and DaVinci, not Star Trek. The names of the beers will help to convey the science component. Early handles include Uncertainty, Singularity, Hoppenheimer, Newton’s, and Anti-Matter, all of which will be available in taster and pint glasses as well as growlers.

Wallace reports being on schedule for an early June debut. He plans to start out by keeping the tasting room open Friday through Saturday. His initial fermentation capacity will be 24 barrels per month. It’s pretty small, but he will up his production capabilities as needed and, though he’ll start out brewing by himself, will bring on assistance in that area when and if demand justifies it.
