Dear Matt, & Leafygreen, As I am learning, the raw veg & nuts are a way to keep the body's pH to a slightly alkiline level, which tells the body it is thriving, not dying. Most of our processed foods, (not necesarily the raw ones we cook), tilt the body's pH to an acid state which is saying to the body "disease & death".
