Charles Heineke
Charles “Charlie” Heineke, is passionate about food. He’s also passionate
about his clients and what they eat! Early mornings you will find him
shopping the markets for the freshest, sustainable foods available in the
region.
Chef Charlie, a very likeable, laid back, native San Diegan began his
flirtation with food at the age of seventeen, when he worked at the Hanalei
Hotel as a dishwasher. He quickly moved up through the ranks and earned
a coveted position as line cook in what was a bustling kitchen where
multitasking was a necessity. Chef Charlie completed his education in food
service production and later in food service management.
Believing in the philosophy of keeping a balance between making a living
and living a life, Charlie became the Chef at Mission Bay Hospital where for
over 15 years, he developed dietary programs that met the demanding
health needs of both patients, staff and visitors alike. On any given day,
over 200 meals were prepared that were nutritionally sound and delicious.
Charlie’s careful attention to detail combined with over 25 years of experience providing healthy
and nutritious meals makes Charlie’s Classic Cooking a unique experience. Every delicious dish,
whether it’s from our economical and healthy meal plan or customized cooking classes, is always
fresh, using locally grown produce and the finest sustainable ingredients seasonally available. All
meals are made from all natural ingredients with no preservatives or additives and 100% trans fat
free.
