Strong in concept, and getting stronger in execution, Gang Kitchen is at its best when the use of Asian ingredients is more subtle. Go for dishes like the shrimp toast, which utilizes bao and uni to great effect, or the Shanghai beef, but avoid the warmed-over, gaijin-friendly versions of pan-Asian takeout food. As this restaurant comes into its own, watch for the cooking to further sharpen. As it is, Gang Kitchen has earned the right to be medium-expensive.
