Ripe fresh fruit and ethereal textures are the secret to Karen Krasne's pastries. Krasne's fruited ricotta tortes must be the real "angel food" cakes. Instead of heavy buttercream, she tops them with barely sweetened whipped cream flavored with the juice of the garnish fruit. The blood orange ricotta torte, especially, is over the top.
