This most Irish of Irish pubs cooks the standard Irish-American dish: corned beef and cabbage, using a good cut of brisket beef and cooking it so that it comes out really tender. But what's that flavor? It tastes like -- could it be? -- it could pass for the legendary corned beef at Katz's Delicatessen on New York City's Lower East Side. Well, yes, and the little flavor-bomb that makes Dublin Square's corned beef taste so good is that most un-Irish of substances: garlic.
