This dinner will be extremely progressive lasting three hours with eight courses in the small plated finessing tasting menu format with another eight small bite speed courses in between. There hasn't been anything like this in San Diego. 22 guests. This dinner will have eight wine pairings through out the 16 course culinary exploration. The menu will consist of foraged ingredients from the South Bay of San Diego, produce from Wild Willow Farm, seafood from Catalina offshore directly from the local fisherman, kurobutta pork chop from Pape Meat company, and A5 Satsuma Wagyu Beef straight from Japan.
